Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Drop tablespoon-sized amounts of the batter onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are firm and the tops spring back when touched.
  8. Cool completely on a wire rack.
  9. For the filling, beat the powdered sugar, milk, and peppermint extract until smooth.
