- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon peppermint extract
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon peppermint extract (for filling)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add the egg, vanilla extract, and peppermint extract to the butter mixture and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Drop tablespoon-sized amounts of the batter onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are firm and the tops spring back when touched.
- Cool completely on a wire rack.
- For the filling, beat the powdered sugar, milk, and peppermint extract until smooth.
- Sandwich two cookies together with the filling and enjoy!
Notes
- These whoopie pies are best enjoyed fresh but can be stored for a few days.
- You can adjust the amount of peppermint extract according to your taste.
