- 2 pounds chicken breast
- 1 cup Chipotle ranch dressing
- 2 cups cooked rice
- 1 cup black beans, drained
- 1 cup corn, canned or frozen
- 1 cup shredded cheese
- 4 large tortillas
- 1/2 cup salsa
Instructions
- Marinate the chicken in Chipotle ranch dressing for at least 30 minutes.
- Grill the chicken until fully cooked, then slice.
- Warm the tortillas on the grill or in a pan.
- Add rice, black beans, corn, and chicken to each tortilla.
- Sprinkle with cheese and add salsa.
- Roll the tortillas tightly and serve.
Notes
- For extra spice, add jalapeños.
- Can substitute chicken with tofu for a vegetarian option.
