Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 4 slices turkey bacon
  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups potatoes, diced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add chicken thighs to the pot and brown on all sides.
  3. Remove chicken and add carrots, celery, and onion to the pot, cooking until softened.
  4. Add garlic and cook for an additional minute.
  5. Return chicken to the pot along with chicken broth, potatoes, herbs, and the cooked bacon. Bring to a boil.
  6. Reduce heat, cover, and simmer for 30-40 minutes until chicken is cooked through.
  7. Remove chicken, shred, and return to the pot. Adjust seasoning with salt and pepper.
