Ingredients

- 1 pound chicken thighs, boneless and skinless
- 4 slices turkey bacon
- 2 cups carrots, chopped
- 1 cup celery, chopped
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 cups potatoes, diced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
- Add chicken thighs to the pot and brown on all sides.
- Remove chicken and add carrots, celery, and onion to the pot, cooking until softened.
- Add garlic and cook for an additional minute.
- Return chicken to the pot along with chicken broth, potatoes, herbs, and the cooked bacon. Bring to a boil.
- Reduce heat, cover, and simmer for 30-40 minutes until chicken is cooked through.
- Remove chicken, shred, and return to the pot. Adjust seasoning with salt and pepper.
Notes
- This stew can be made ahead of time and stored in the refrigerator.
- Feel free to add other vegetables like peas or corn for extra flavor.
