Ingredients

- 1 pound chicken thighs
- 4 cups chicken broth
- 2 cups chopped vegetables (carrots, celery, onion)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- salt and pepper to taste
- 1 cup egg noodles
Instructions
- In a large pot, combine chicken thighs, chicken broth, vegetables, garlic, thyme, bay leaf, salt and pepper.
- Bring to a boil over medium-high heat, then reduce to a simmer.
- Cook for about 30 minutes, or until the chicken is tender.
- Remove chicken, shred, and return to the pot.
- Add egg noodles and cook according to package instructions.
- Serve hot and enjoy!

- Add fresh herbs for extra flavor.
- Can substitute with turkey or add beans for variation.
