- 4 boneless, skinless chicken breasts
- 4 slices turkey bacon
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Flatten the chicken breasts to about 1/2 inch thickness.
- Season the flour with salt and pepper. Dredge each chicken breast in the flour, dip in eggs, and coat with breadcrumbs mixed with Parmesan cheese.
- In a large skillet, heat the olive oil over medium heat. Cook the turkey bacon until crisp, then remove and set aside.
- In the same skillet, add the breaded chicken and cook until golden brown, about 4-5 minutes per side.
- Drizzle with lemon juice and bake in the oven for 10 minutes.
- Serve garnished with the crispy turkey bacon and fresh parsley.
Notes
- For extra flavor, marinate the chicken in lemon juice and herbs for 30 minutes before cooking.
- Substitute regular bacon for turkey bacon if preferred.
