- 4 medium zucchini
- 1 pound ground chicken
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchini in half lengthwise and scoop out the center.
- In a skillet, brown the ground chicken over medium heat until fully cooked.
- Add the marinara sauce, Italian seasoning, garlic powder, salt, and pepper to the skillet and stir to combine.
- Stuff the zucchini halves with the chicken mixture.
- Top each stuffed zucchini with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes until the zucchini is tender and the cheese is bubbly.
Notes
- For extra flavor, add crushed red pepper flakes to the chicken mixture.
- These can be served with a side salad for a complete meal.
