  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the center.
  3. In a skillet, brown the ground chicken over medium heat until fully cooked.
  4. Add the marinara sauce, Italian seasoning, garlic powder, salt, and pepper to the skillet and stir to combine.
  5. Stuff the zucchini halves with the chicken mixture.
  6. Top each stuffed zucchini with mozzarella and Parmesan cheese.
  7. Bake in the preheated oven for 25-30 minutes until the zucchini is tender and the cheese is bubbly.

Notes

  • For extra flavor, add crushed red pepper flakes to the chicken mixture.
