Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1/2 cup diced onions
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix shredded chicken, half of the enchilada sauce, half of the cheese, onions, cumin, and garlic powder.
  3. Fill each tortilla with the chicken mixture and roll them up.
  4. Place the rolled tortillas in a baking dish and pour the remaining enchilada sauce on top.
  5. Sprinkle the remaining cheese over the sauce.
  6. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.

Notes

  • Serve with sour cream and fresh cilantro for added flavor.
  • You can substitute shredded beef or beans for chicken.
