- 2 cups cooked, shredded chicken
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 package burrito-sized flour tortillas
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, and chili powder.
- In a baking dish, layer tortillas, then top with the chicken mixture.
- Sprinkle cheese on top and cover with more tortillas.
- Bake for 25-30 minutes until the cheese is bubbly.
