- 1 pound chicken breasts
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups cooked rice
- 1 cup shredded cheese
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add black beans, corn, salsa, cumin, chili powder, garlic powder, and onion powder on top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Once cooked, shred the chicken with two forks and stir everything together.
- Serve the mixture over cooked rice and top with shredded cheese.

- This recipe can be customized with toppings like avocado, sour cream, or fresh cilantro.
- For a spicier version, add jalapeños or hot sauce.
