- 1 pound boneless chicken thighs
- 4 cups chicken broth
- 2 cups all-purpose flour

- 1 cup milk
- 1/4 cup butter
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, diced
Instructions
- In a large pot, boil the chicken thighs in chicken broth until cooked through. Remove and shred the chicken.
- In the same pot, add carrots, celery, and onion. Cook until softened.
- Prepare the dumpling batter by mixing flour, baking powder, salt, milk, and melted butter.
- Add the shredded chicken back into the pot, then drop spoonfuls of dumpling batter on top.
- Cover and simmer until dumplings are fluffy and cooked through, about 15 minutes.
Notes
- You can use store-bought rotisserie chicken for a quicker option.
- Feel free to add herbs like thyme or parsley for added flavor.
