- 1 pound chicken thighs
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup frozen peas
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 4 tablespoons butter, melted
Instructions
- In a large pot, combine chicken thighs and chicken broth. Bring to a simmer and cook until the chicken is tender.
- Remove the chicken, shred it, and return it to the pot.
- Add the carrots, celery, and peas. Simmer until vegetables are tender.
- In a separate bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until just combined.
- Drop spoonfuls of the dumpling batter over the simmering stew. Cover and cook for 15-20 minutes until the dumplings are cooked through.
