- 1 tablespoon olive oil
- 4 ounces turkey bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups cooked rotini pasta
- 2 cups cooked, shredded chicken
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
- Add diced onion and garlic to the pot and sauté until translucent.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream, rotini pasta, shredded chicken, and Parmesan cheese.
- Season with Italian seasoning, salt, and pepper. Simmer for 5 to 10 minutes until heated through.
- Serve hot with extra Parmesan on top if desired.
Notes
- This soup can be prepped in advance and frozen for later use.
- For a lighter version, substitute heavy cream with half-and-half.
