Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
- Add ground beef to the pot and cook until browned. Drain excess fat if necessary.
- Stir in taco seasoning, diced tomatoes, and chicken broth. Bring to a simmer.
- Add elbow macaroni and cook according to package instructions until al dente.
- Reduce heat and mix in sour cream and cheddar cheese until melted and creamy.
- Serve warm, garnished with extra cheese or taco toppings if desired.

- For a spicier kick, add jalapeños or hot sauce.
