- 2 pounds potatoes, diced
- 1 pound smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning
- 1/2 cup sour cream
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine potatoes, smoked sausage, olive oil, and ranch seasoning. Toss until well coated.
- Spread the mixture evenly on a baking sheet and bake for 25-30 minutes until potatoes are tender.
- Remove from oven and stir in sour cream and cheddar cheese. Bake for an additional 5 minutes until the cheese is melted.
- Serve hot and enjoy!
Notes
- For extra flavor, add diced onions or bell peppers to the mix.
- This dish can be made ahead of time and reheated.
