Instructions
- In a bowl, mix all-purpose flour, semolina flour, and salt.
- Add the egg and gradually mix in water until a dough forms.
- Knead the dough for about 5-7 minutes until smooth.
- Wrap the dough in plastic and let it rest for 30 minutes.
- Roll out the dough and cut it into small pieces, shaping them into cavatelli.
- In a skillet, melt the butter over medium heat until it turns brown.
- Add the chopped walnuts and sage leaves, cooking until fragrant.
- Boil the cavatelli until they float, then drain and add to the skillet, tossing to coat.
- Season with salt and pepper, then serve warm.
Notes
- For a richer flavor, consider using ghee instead of butter.
- Freshly grated Parmesan can be added for serving.
