Ingredients

  • 1 large egg
  • 1/2 cup water

  • 1/4 cup fresh sage leaves
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix all-purpose flour, semolina flour, and salt.
  2. Add the egg and gradually mix in water until a dough forms.
  3. Knead the dough for about 5-7 minutes until smooth.
  4. Wrap the dough in plastic and let it rest for 30 minutes.
  5. Roll out the dough and cut it into small pieces, shaping them into cavatelli.
  6. In a skillet, melt the butter over medium heat until it turns brown.
  7. Add the chopped walnuts and sage leaves, cooking until fragrant.
  8. Boil the cavatelli until they float, then drain and add to the skillet, tossing to coat.
  9. Season with salt and pepper, then serve warm.

Notes

  • For a richer flavor, consider using ghee instead of butter.
  • Freshly grated Parmesan can be added for serving.
