- 8 ounces fettuccine pasta
- 1 pound shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 red bell pepper, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
Instructions
- Cook the fettuccine according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat and add the diced onion, cooking until translucent.
- Add the garlic and red bell pepper; sauté for another 2-3 minutes.
- Stir in the shrimp and Cajun seasoning; cook until the shrimp turns pink.
- Pour in the heavy cream and bring to a simmer; add Parmesan cheese and stir until combined.
- Toss in the cooked fettuccine and parsley, mixing well to combine.
- Serve hot, garnished with additional parsley if desired.
