- 1 pound chicken breast
- 1 cup orzo pasta
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 4 cups chicken broth
- 1 cup bell peppers, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup spinach
- Salt to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken and season with Cajun seasoning; cook until browned.
- Remove chicken from skillet and set aside.
- Add onion, garlic, and bell peppers to the skillet; sauté until softened.
- Stir in orzo and chicken broth; bring to a boil.
- Reduce heat and let simmer for about 10 minutes.
- Add chicken back to skillet and stir in spinach until wilted.
- Season with salt and serve hot.
Notes
- For a spicier version, increase the amount of Cajun seasoning.
- Serve with a side of garlic bread for a complete meal.
