- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon cinnamon
- 1/2 cup Greek yogurt
- 1 tablespoon honey
- 1/4 cup chopped nuts
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into cubes.
- Toss the sweet potato cubes with olive oil and cinnamon.
- Spread them on a baking sheet and roast for 25-30 minutes until tender.
- In a bowl, mix Greek yogurt with honey.
- Once the sweet potatoes are cooked, serve them topped with the yogurt mixture and chopped nuts.
Notes
- For added flavor, try adding a pinch of nutmeg.
- This dish can be served warm or cold.
