Ingredients

  • 1 cup heavy whipping cream
  • 1 cup Biscoff cookies, crushed
  • 1 cup brewed coffee, cooled
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder

Instructions

  1. In a mixing bowl, whip the heavy cream until soft peaks form.
  2. In another bowl, combine mascarpone cheese, sugar, and vanilla extract, mixing until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture.
  4. Dip each Biscoff cookie into the brewed coffee and layer at the bottom of a dish.
  5. Spread a layer of the mascarpone mixture over the cookies.
  6. Repeat the layers until all ingredients are used, finishing with a mascarpone layer on top.
  7. Sprinkle cocoa powder over the top and refrigerate for at least 4 hours before serving.

Notes

  • For a stronger coffee flavor, add a shot of espresso to the brewed coffee.
  • Feel free to substitute with different flavored cookies if desired.
