- 8 ounces mascarpone cheese
- 1 cup heavy whipping cream
- 1 cup Biscoff cookies, crushed
- 1 cup brewed coffee, cooled
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa powder
Instructions
- In a mixing bowl, whip the heavy cream until soft peaks form.
- In another bowl, combine mascarpone cheese, sugar, and vanilla extract, mixing until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- Dip each Biscoff cookie into the brewed coffee and layer at the bottom of a dish.
- Spread a layer of the mascarpone mixture over the cookies.
- Repeat the layers until all ingredients are used, finishing with a mascarpone layer on top.
- Sprinkle cocoa powder over the top and refrigerate for at least 4 hours before serving.
Notes
- For a stronger coffee flavor, add a shot of espresso to the brewed coffee.
- Feel free to substitute with different flavored cookies if desired.
