Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until fragrant.
- Add the bell pepper and curry powder, stirring well.
- Pour in the coconut milk and lime juice, then bring to a simmer.
- Place the cod fillets in a baking dish and pour the coconut curry mixture over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through.
