- 6 large eggs
- 1 cup asparagus, chopped
- 1/2 cup goat cheese, crumbled
- 1/4 cup fresh herbs (such as parsley and chives), chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk the eggs until well beaten. Season with salt and pepper.
- In an oven-safe skillet, heat olive oil over medium heat. Add chopped asparagus and sauté until tender.
- Pour the beaten eggs over the asparagus and cook for a few minutes until the edges start to set.
- Sprinkle the goat cheese and herbs on top.
- Transfer the skillet to the oven and bake for about 15-20 minutes until the frittata is puffed and set.
- Remove from the oven, let cool slightly, slice, and serve.
Notes
- Feel free to substitute asparagus with other vegetables like spinach or bell peppers.
