- 2 large cucumbers

- 2 tablespoons sesame seeds

Instructions
- Wash and slice the cucumbers thinly.
- In a bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, and red pepper flakes.
- Pour the dressing over the cucumbers and toss to combine.
- Sprinkle sesame seeds and chopped green onions on top and serve.
Notes
- For added crunch, you can include chopped bell peppers or carrots.
