- 5 cups arugula
- 2 ripe pears, thinly sliced
- 1/2 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt to taste
- Pepper to taste
Instructions
- In a large salad bowl, combine the arugula, sliced pears, walnuts, and feta cheese.
- In a small jar, combine olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper. Shake well until emulsified.
- Drizzle the honey vinaigrette over the salad and toss gently to combine.
- Serve immediately and enjoy!

- For a vegan option, omit the feta cheese.
- Use any nuts you prefer in place of walnuts.
