- 1 pound chicken thighs
- 4 cups chicken broth
- 2 tablespoons ginger, grated
- 1 cup scallions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 8 ounces egg noodles
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, combine chicken thighs and chicken broth. Bring to a boil.
- Add ginger, scallions, soy sauce, sesame oil, garlic, salt, and pepper. Simmer for 20 minutes.
- Remove chicken, shred it, and return to the pot.
- Add egg noodles and cook according to package instructions.
- Serve hot, garnished with additional scallions.
Notes
- For a vegetarian option, substitute chicken with tofu and vegetable broth.
- This soup freezes well; store in an airtight container.
