- 1 pound chicken thighs, boneless and skinless
- 4 cups chicken broth
- 2 tablespoons ginger, minced
- 4 scallions, chopped
- 2 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 8 ounces egg noodles
- 1 cup bok choy, chopped
- 1 teaspoon black pepper
- 2 cups water
Instructions
- In a large pot, combine chicken broth, water, ginger, garlic, and soy sauce.
- Add chicken thighs and bring to a boil. Reduce heat and simmer for 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Add egg noodles and bok choy, cooking until noodles are tender.
- Stir in scallions and sesame oil, cooking for an additional 2 minutes.
- Season with black pepper and serve hot.
