  • 8 ounces egg noodles
  • 1 cup bok choy, chopped
  • 1 teaspoon black pepper
  • 2 cups water

Instructions

  1. In a large pot, combine chicken broth, water, ginger, garlic, and soy sauce.
  2. Add chicken thighs and bring to a boil. Reduce heat and simmer for 20 minutes.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Add egg noodles and bok choy, cooking until noodles are tender.
  5. Stir in scallions and sesame oil, cooking for an additional 2 minutes.
  6. Season with black pepper and serve hot.
