Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together buttermilk, melted butter, and eggs.
- Combine the wet ingredients with the dry ingredients and fold in the diced apples until just combined.
- Fill muffin tins and bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before serving.
Notes
- For extra moisture, add ¼ cup of applesauce to the batter.
- Top with a sprinkle of cinnamon sugar before baking for added sweetness.
