- 1 cup pumpkin puree
- 1 cup grated apple
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the pumpkin puree, grated apple, sugars, and vegetable oil until well combined.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour, baking powder, baking soda, spices, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Scoop the batter into the prepared muffin tin and fill each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For added texture, you can mix in some chopped nuts or chocolate chips.
- These muffins are best served fresh but can be stored for a few days.
