- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 3/4 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup plain yoghurt
- 1 teaspoon vanilla extract
- 1 cup grated apple
- 1/2 cup chopped almonds
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, cream the sugar and butter until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the yoghurt and vanilla until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the grated apple and chopped almonds.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Notes
- For added flavor, consider adding a pinch of nutmeg.
- This cake pairs well with a dusting of powdered sugar on top.
