Apple and Almond Yoghurt Cake: Delightfully Easy Baking at Home

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup plain yoghurt
  • 1 teaspoon vanilla extract
  • 1 cup grated apple
  • 1/2 cup chopped almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream the sugar and butter until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the yoghurt and vanilla until combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the grated apple and chopped almonds.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let it cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

  • For added flavor, consider adding a pinch of nutmeg.
  • This cake pairs well with a dusting of powdered sugar on top.
