Ingredients

  • 1 cup sushi rice
  • 2 cups water
  • 1 tablespoon rice vinegar
  • 4 slices turkey bacon
  • 1/2 cup cucumber, sliced
  • 1/2 cup avocado, sliced
  • 1/4 cup cream cheese
  • 1 sheet nori

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine rice and water; bring to a boil. Reduce heat, cover, and simmer for 20 minutes. Remove from heat and let sit for another 10 minutes.
  2. Stir in the rice vinegar to the cooked rice.
  3. Preheat the air fryer to 375°F (190°C).
  4. In the air fryer basket, arrange the turkey bacon and cook until crispy, about 10 minutes. Remove and chop.
  5. On a sheet of nori, spread a layer of sushi rice and top with turkey bacon, cucumber, avocado, and cream cheese.
  6. Carefully transfer the sushi pizza to the air fryer and cook for 5 minutes until everything is warmed through.
  7. Slice and serve immediately.

Notes

  • Feel free to add other toppings such as sesame seeds or spicy mayo.
  • Leftover sushi rice can be stored in the fridge for up to a week.
