- 8 ounces pasta
- 1 medium eggplant, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups marinara sauce
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, combine the diced eggplant with olive oil, salt, and pepper.
- Add the eggplant to the air fryer basket and cook for 15 minutes, shaking halfway through.
- Meanwhile, cook the pasta according to package instructions until al dente.
- Once the eggplant is done, combine it with the cooked pasta and marinara sauce.
- Transfer the mixture to the air fryer and sprinkle with Parmesan cheese.
- Air fry for an additional 5 minutes until the cheese is melted and bubbly.

- Feel free to add extra vegetables or protein to the dish.
